
Baking is not my forte but it is as therapeutic as pulling weeds in the garden for me. If I’m not in the garden, I’m in the kitchen. I don’t mean in the kitchen to cook a meal but measuring out the flours and beating eggs for a treat. My go to cookie recipe has the perfect crispy edge with just the right amount of soft chewy bite in the middle. The original recipe called for nuts and twice the amount of chocolate chips so feel free to add them back in for your version.
Ingredients
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1 cup brown sugar
2 large eggs
1 tbsp vanilla extract
1 tsp baking soda
1/2 tsp salt
2 cups all purpose flour
1 cup chocolate chips
Preheat oven to 375°F
Combine flour, baking soda and salt. Set aside.
Blend butter, sugar, and brown sugar in medium size bowl/mixer until smooth. Add eggs and vanilla extract. Mix thoroughly.
Slowly add flour, salt and baking soda mixture until well blended.
Fold in chocolate chips. Scoop a spoonful of batter onto baking sheet. Bake for 10-12 minutes or to desired doneness.
