Easy Kids Approved Yogurt Pancakes

These pillowy soft yogurt pancakes saved the girls many mornings from regular cold cereal and milk. I’m not shaming breakfast cereal. But sometimes you just want something other than… well, cold cereal. These are quick and easy to make, so I make them pretty often. They’re our celebratory birthday breakfast tradition. We love to add various seasonal fruits on top. They’re also delectable alone. Feel free to add chocolate chips, frozen berries or even grated veggies (omit vanilla if you do) into the batter.

To switch things up and add color to our usual yogurt pancakes, I blended 2 tbsp of cooked purple sweet potatoes into the kefir before adding the eggs and salt. I also folded some chopped white chocolate into the batter. The batter turned into a beautiful blue when cooked and was a nice surprise for everyone. It was a big hit with the kids!

These are our girls’ absolute favorite pancakes. To save time on busy mornings, try measuring the dry ingredients out ahead of time.

Ingredients
  

Dry Ingredients

  • ¾ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp sugar

Wet Ingredients

  • 1 cup kefir yogurt
  • 2 eggs
  • 1 pinch salt

Instructions
 

  • In a small size bowl, combine the flour with the rest of the dry ingredients. Set aside.
  • Beat eggs in with kefir and salt in a medium size bowl. Add dry ingredients. Mix to combine.
  • For mini pancakes, pour tablespoonful onto lightly oiled skillet and cook over medium low heat. Flip when bubbles form on batter.
  • Brush skillet with oil and repeat.

My go to when I want banh uot just for one. Ingr My go to when I want banh uot just for one. 
Ingredients 
3/4  cup rice flour
1/4 cup tapioca flour
1/2 tsp salt
2 tsp oil
2.5 cups water
1 tbsp potato starch
In a medium size bowl, combine rice flour, tapioca flour, potato starch, salt, oil and water. Set aside for 15-20 minutes before cooking. 
Oil the bottom of your microwave safe container well (I’m using AnyDay large shallow dish).
Pour 1/2 cup of flour mix into container. 
Microwave for 1 minutes and 30 second. The dough is opaque when cooked. If it’s still white, cook at increment of 30 seconds. 
Note: The noodle sheet are easier to peel off if I let it cool a bit. 
To make rice noodle sheets, reduce the amount of water to 1.5 cups.

The store bought blend is usually too spicy for the kids and I can control the amount of heat better if we make our own. One of favorite blend to buy is shawarma. I just toss a tbsp full of it, 1 tsp salt and a cup of yogurt to marinate chicken for at least an hr. For large batch I double the ingredients and grill on our smokeless indoor grill.
