
These pillowy soft yogurt pancakes saved the girls many mornings from regular cold cereal and milk. I’m not shaming breakfast cereal. But sometimes you just want something other than… well, cold cereal. These are quick and easy to make, so I make them pretty often. They’re our celebratory birthday breakfast tradition. We love to add various seasonal fruits on top. They’re also delectable alone. Feel free to add chocolate chips, frozen berries or even grated veggies (omit vanilla if you do) into the batter.


To switch things up and add color to our usual yogurt pancakes, I blended 2 tbsp of cooked purple sweet potatoes into the kefir before adding the eggs and salt. I also folded some chopped white chocolate into the batter. The batter turned into a beautiful blue when cooked and was a nice surprise for everyone. It was a big hit with the kids!

Easy Kids Approved Yogurt Pancakes
Ingredients
Dry Ingredients
- ¾ cup all-purpose flour
- 1 tsp baking soda
- 1 tbsp sugar
Wet Ingredients
- 1 cup kefir yogurt
- 2 eggs
- 1 pinch salt
Instructions
- In a small size bowl, combine the flour with the rest of the dry ingredients. Set aside.
- Beat eggs in with kefir and salt in a medium size bowl. Add dry ingredients. Mix to combine.
- For mini pancakes, pour tablespoonful onto lightly oiled skillet and cook over medium low heat. Flip when bubbles form on batter.
- Brush skillet with oil and repeat.
